Tomato Tortelloni - Italian Pasta

A comforting, tomato tortelloni recipe featuring our Chopped Tomatoes and Vegan Tortelloni🍅.

 Tomato Tortelloni - Pasta Style Ý

INGREDIENTS

  • 2 tbsp Olive Oil
  • 4 large cloves garlic, grated
  • 600g Chopped Tomatoes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp Agave Syrup
  • 20g fresh basil, finely chopped
  • 2 packs Mr Organic Tortteloni, cooked
  • Salt & pepper to taste
  • Vegan parmesan to serve

METHOD

  1. Heat the olive oil in a large saucepan, then add the grated garlic. Cook for roughly 1 minute or until fragrant and make sure to stir the garlic to prevent it burning.
  2. Add the chopped tomatoes and season with salt, black pepper and agave syrup. Bring to a simmer and cook for 15-20 minutes. Add the fresh basil after 10 minutes and stir through to
    combine well.
  3. In the meantime, prepare the Mr Organic Tortteloni according to their packaging instructions.
  4. Once cooked, drain the ravioli and transfer them into the sauce. Give everything a good stir to evenly coat the ravioli in the sauce. Once the sauce has reduced, you’re ready to serve!

Chef’s tip:

These rustic tomato ravioli are simply divine – especially when served with a sprinkle of vegan parmesan on top! To make your own at home, simply blend 1 cup almonds, 2 tbsp nutritional yeast, ½ tsp salt & ¼ tsp garlic powder in a spice grinder and keep it in a closed jar in your fridge!
